Savory Rice Pilaf
Ingredients:
3 tablespoons butter
3 tablespoons grated onions
1/2 cup diced, carrots
2 cups instant long grain rice
1 1/2 teaspoons fresh lemon zest
1-14 ounce can chicken or vegetable broth
3/4 cup frozen sugar snap peas (thawed)
Directions:
Cook on low heat butter, onions, and carrots for 5 minutes. Add rice and lemon zest cook another 5 minutes. Add broth bring to a boil, turn heat off until liquid is absorbed. Add peas well hot. Sprinkle lightly with Copperleaf Gourmet Blackened Seasoning (optional)
Makes about 4-6 servings. |
