Sesame Teriyaki Chicken Boats

2 Tbsp. oil
1 pound uncooked boneless, skinless chicken breast

1 cup celery, copped
1 cup red bell pepper, chopped
1/3 cup scallion, chopped
2/3 cup CopperLeaf Gourmet Sesame Teriyaki Sauce
Romaine lettuce leafs

In a large skillet, heat the oil heat over medium-high heat. Add the chicken and cook for 4-5 minutes or until lightly browned. Add celery, red bell pepper and scallions and cook an additional 5 minutes, stirring frequently. Then stir in sesame teriyaki sauce, heat and server. Spoon ¼ cup into lettuce leaves. Servings 3-4
