Chicken Salad Sandwich for Two

1 tablespoon oil
1 ½ teaspoon CopperLeaf Gourmet Blackened Seasoning

2 chicken breast skinless and boneless
   about 1 ½ cup cooked chicken (diced into small pieces)
¼ cup chopped celery
1 tablespoon slivered almonds
1 tablespoon green onion (minced)
3 tablespoon Mayo
3 tablespoon sour cream

Season the chicken breasts on both sides with CopperLeaf Gourmet Blackened Seasoning, and then put them in a medium skillet with oil. Cook chicken until it is cooked through, about 20 minutes. Remove the chicken from pan and refrigerate for at least 1 hour. When the chicken is chilled, dice into small pieces.
