Monterey Salsa Chicken

1/4 cup oil
4 boneless skinless chicken breast

2/3 cup flour
2 teaspoons CopperLeaf Gourmet Southwest Seasoning
8 ounces shredded, Monterey Jack or Pepper Jack cheese
1/2 cup CopperLeaf Gourmet Country Garden Salsa

Directions; combine flour and Southwest Seasoning, coat chicken evenly on both sides with flour mixture. Cook chicken in oil 3-4 minutes on each side or until done. Sprinkle each chicken breast with 2 ounces of cheese then top with 2 tablespoons of salsa, cover with lid until cheese is melted about 1 minute.
